How to cook
- Steam: 8–10 minutes with potatoes, herbs and lemon.
- Pan-fry: dust in oatmeal, fry in butter for 3 minutes per side — the Scottish classic.

- Smoke: brine and hot-smoke for kippers; cold-smoke for cured fillets.
