How to cook
- Grilled / griddled: 60 seconds per side over high heat with olive oil, garlic and chilli.
- Braised in tomato: low and slow for 45 minutes with tomato, white wine and parsley — a Sicilian classic.
- Stuffed: with breadcrumbs, herbs and Parmesan; braise in tomato sauce.
- Black risotto: use the cuttlefish ink for risotto al nero.
Pair with a chilled Vermentino, Albariño or a Sicilian Grillo.
