A 4g sachet of pure cuttlefish ink — natural food colouring that turns pasta, rice, pizza dough and risotto a striking ace-of-spades black. Cuttlefish ink can be used identically to squid ink (the visual results are essentially indistinguishable), and has minimal effect on flavour — the impact is mostly visual. Note that cuttlefish ink thickens faster than squid ink in pasta and rice applications.

How to use
- Black pasta dough: add to a basic pasta dough for jet-black tagliatelle.
- Risotto al nero: stir into a finished seafood risotto.
- Pizza dough: add to dough for striking dark bases.
- Rice / paella variations: add to the cooking liquid for arroz negro.
- Sauces and emulsions: small amount in shellfish sauces for visual contrast.
