How to cook
- Pan-fry (Scottish style): dust with oatmeal, fry in butter for 3 minutes per side.
- Steam: 8–10 minutes with potatoes, herbs and lemon.
- Pickle (Scandinavian): brine then cure in vinegar with onion and dill.
- Smoke: brine and hot-smoke over oak for kippers, or cold-smoke for cured fillets.
- Stew / soup: add to robust seafood stews and chowders.
Pair with a chilled English sparkling, a clean Riesling or a cold lager for fried preparations.
