How to cook sea bass fillet

  • Pan-fry skin-down: 4 minutes skin-down in hot oil, press lightly for the first minute, flip for 1–2 minutes off heat.
  • Oven baked: 200°C for 10–12 minutes with butter, lemon and herbs.
  • Thai sea bass: with chilli, lime, ginger and coconut.
  • Sea bass ceviche with avocado: a Bradley’s house favourite for warm-weather entertaining.
  • Battered: for a finer-textured chip-shop alternative.
