This is one of the finest salmon fillets we stock. Our sushi-grade Coho salmon fillet (Oncorhynchus kisutch) weighing 800g–900g arrives vacuum-packed, skinless and boned – ready to slice and serve raw, or cook to perfection. Farmed in the cold, clean waters off the coast of Chile.

Coho salmon is celebrated by chefs and home cooks alike for its vibrant orange flesh, clean flavour, and versatility. As a sushi-grade fillet, it meets the highest standards of freshness and handling, making it suitable for sashimi, sushi, poke bowls, and ceviche as well as all cooked preparations.

What It Tastes Like

Coho salmon has a clean, mild flavour with a subtle sweetness and buttery finish. The flesh is firm yet silky, with a medium fat content that keeps it moist whether eaten raw or cooked. When served as sashimi, the texture is smooth and almost melts on the tongue.

Cooking Suggestions

  • Sashimi: Slice thinly against the grain while still semi-frozen for clean cuts. Serve with soy sauce, pickled ginger, and wasabi.
  • Sushi: Cut into nigiri-sized slices and drape over seasoned rice. The firm texture holds beautifully.
  • Poke Bowl: Cube the salmon and marinate in soy, sesame oil, rice vinegar, and spring onions for a Hawaiian-style poke.
  • Gravadlax: Cure with salt, sugar, and dill for 48 hours for homemade gravadlax – perfect for entertaining.

Storage Instructions

Store frozen at -18°C or below. Once defrosted, consume within 24 hours and do not refreeze. To defrost, place in the refrigerator overnight. For faster thawing, keep sealed and place under cold running water for approximately 1 hour.
