How to cook
- Pan-fry: pat dry, season, place skin-side down in a hot oiled pan, press flat for 30 seconds, leave for 4–5 minutes until skin is crisp, flip for 1–2 minutes
- Oven: bake at 190°C for 12–15 minutes with lemon and herbs
- Cure: slice thinly and gravlax with salt, sugar and dill for 24–48 hours
- Best served still pink in the centre — the fat carries the flavour
