Oreochromis niloticus is a lean freshwater fish with light, firm, flaky flesh and a delicate sweet taste. We’ve sourced this as a deliberate alternative to standard Chinese-farmed tilapia — wild-quality flavour and cleaner-tasting meat.

How to cook

  • Whole-roast: 200°C for 22–28 minutes with lemon, garlic and herbs in the cavity.
  • Pan-fry: 4–5 minutes per side with butter and lemon.
  • Grill / BBQ: 5–7 minutes per side over medium-high heat.
  • Asian steamed: 14–18 minutes with ginger, soy and spring onion.
  • Tacos: blackened with chilli-lime, served with slaw in soft tortillas.

Pair with a chilled Sauvignon Blanc or a tropical-fruity Riesling.
