How to cook
- Whole-roast: 200°C for 22–28 minutes with lemon, garlic and herbs in the cavity.
- Pan-fry: 4–5 minutes per side with butter and lemon.
- Grill / BBQ: 5–7 minutes per side over medium-high heat.
- Asian steamed: 14–18 minutes with ginger, soy and spring onion.
- Tacos: blackened with chilli-lime, served with slaw in soft tortillas.
