How to cook milkfish
- Grilled (inihaw): the Filipino classic — stuffed with tomatoes, onions and ginger, grilled whole over coals.
- Daing-style: butterflied, marinated in vinegar and garlic, pan-fried until crisp.
- Steamed: with ginger, soy and spring onion.
- Fried whole: 200°C oil for crisp skin and flaky flesh.
- Sinigang (Philippine sour stew): with tamarind, vegetables and chillies.
