Red snapper is the premium restaurant white fish: lean, sweet, firm flesh that turns beautifully flaky when cooked. The soft skin makes it ideal for grilling and broiling. At this size, perfect for individual whole-fish servings — the visual drama of red snapper at every place setting.

How to cook whole red snapper

  • Mediterranean roast: 200°C for 18–22 minutes stuffed with lemon, garlic, oregano and parsley.
  • BBQ: score the skin, grill 6–7 minutes per side.
  • Italian Livornese-style: braised with cherry tomatoes, capers, white wine, garlic and anchovy.
  • Caribbean braise: in coconut and tomato with thyme, allspice and Scotch bonnet.
  • Steamed (Asian-style): 12–15 minutes with ginger, soy and spring onion.

Pair with a chilled Riesling or a tropical-fruity Sauvignon Blanc.
