How to cook
- Pan-fry: dust with seasoned flour, fry in oil for 3 minutes per side until opaque.
- Bake: 200°C for 10–12 minutes with herbs and lemon.
- Beer-battered: 180°C for 5–6 minutes.
- Fishcakes: poach in milk, flake into potato or béchamel.
- Tacos: blackened with chilli and lime, served in tortillas with slaw.
