How to cook
- Pan-fry skin-side down: 4 minutes skin-down in oil, flip for 1–2 minutes off-heat.
- Bake: 200°C for 12–15 minutes with butter, lemon and herbs.
- BBQ: grill skin-down for 4 minutes, flip for 1.
- Asian style: steamed with ginger, soy and spring onion.
- Tray-bake: over cherry tomatoes, butter beans and chorizo.
Pair with a chilled Riesling or Sauvignon Blanc.
