How to cook
- Spanish plancha (the classic): heat a flat-iron grill, lay shells flat, cook 2–3 minutes; finish with sea salt, parsley, garlic and lemon.
- Pan-fry: sauté in olive oil with garlic, white wine and parsley for 3–4 minutes.
- Grill: top with garlic butter; grill 3–4 minutes.
- Paella: arrange across the rice in the last 5 minutes.
Pair with a chilled Albariño, Manzanilla sherry or a dry English sparkling.
