A 1kg pack of cooked crab claws — honestly labelled as stock-grade. These are claws that are light on meat or partially broken, perfect for making bisques, stocks and chowder bases where the shell delivers the flavour rather than the picked meat. A bargain ingredient for a serious cook who knows the trick: simmer with aromatics, strain, build a proper crab base, save the meat for whatever’s in there.
