Among the world’s most prized delicacies are these crustaceans. Each of these Canadian wild-caught lobsters weighs approximately 500-550g, cooked, then frozen in the whole form. All you need to do is defrost and hammer away!

The light-coloured claw meat of the cooked lobster has a soft, easily chewed texture and a subtle sweetness to it. The lobster shell is best used to make lobster stock, which goes well with butter and grilled lemons.

A lobster can be enjoyed either on its own with a bit of butter and lemon juice, or in a lobster pasta dish or yummy fish pie. No hard work is required since these lobsters have already been cooked; simply defrost them before you hammer them. Have the best Lobster Thermidor ever!

Using Freshly Cooked Lobster

After defrosting, prepare as follows. Unwrap. The claw shell and claw knuckles can be removed by twisting them apart. Please use care when handling the shells.

Slice the tail in half with a sharp knife inserted into the head’s back. Carefully remove and discard the pale sac, the head gills, and the dark filament along the tail. Crack the lobster shell by tapping the claws or legs firmly, then break off their segments. Scoop out the lobster meat with a fork.
