How to serve
- Cold (the classic): halve, serve with mayonnaise, lemon and a green salad.
- Warm thermidor: halve, top with brandy-cream sauce, glaze under the grill.
- Grilled / BBQ: halve, brush with garlic butter, grill flesh-up for 4–5 minutes.
- Bisque: use the shell to make stock for one of the great soups.
Pair with chilled Champagne, Chablis or a buttery Chardonnay.
