How to serve jellied eels

Jellied eels are eaten cold and benefit from a quick re-set after defrosting. If your bowl arrives frozen, remove the lid, microwave on full power for 6–8 minutes (or until the contents reach boiling point), then let it set in the fridge for 4 hours. Eat within 48 hours of setting. Serve straight from the bowl with crusty bread, malt or chilli vinegar and a turn of white pepper — the way the East End eel-and-pie houses have done for generations.
