One wild-caught Icelandic redfish per pack, 300–400g, headless. In short supply but available while stocks last. Beheaded and frozen on the catching boat to ensure the finest catch-to-doorstep quality. Redfish (Sebastes) has light-coloured, sweet, medium-firm flesh that holds together beautifully.

How to cook
- Whole-roast: 200°C for 18–22 minutes stuffed with lemon and herbs.
- BBQ: 5–7 minutes per side over medium-high heat.
- Pan-fry whole: 4–5 minutes per side in butter and oil.
- Steam (Asian-style): 12–15 minutes with ginger, soy and spring onion.
Pair with a chilled Picpoul de Pinet or Albariño.
