How to cook lobster tail

The classic preparation is butterflying the tail — lay it shell-down and split the top of the shell down the middle with kitchen scissors, then loosen the meat over the shell so it sits proud. Brush with butter, lemon and salt before cooking. Don’t overcook — lobster turns rubbery quickly past the 5-minute mark.

  • Oven (broil): butterfly, brush with garlic butter, broil at high heat for 8–10 minutes until the meat is opaque.
  • Barbecue: butterfly and grill shell-side down for 4–5 minutes, flip and finish flesh-side for 2–3 minutes more.
  • Pan: sauté butterflied tail in butter for 2 minutes each side, finish with a splash of white wine.
  • Boil/steam: simmer in salted water for 6–8 minutes until the shell turns deep red and the meat is opaque.

Serve with melted garlic butter, a wedge of lemon and a chilled Chardonnay or Viognier — the food and wine pairing doesn’t get any better.
