How to cook mackerel fillets
- Pan-fry skin-down: 4 minutes skin-down in hot oil, flip for 1 minute — the classic mackerel preparation.
- Grill: 3–4 minutes per side under a hot grill, finish with butter and lemon.
- BBQ: 3 minutes per side over medium-high heat — the smoke complements mackerel beautifully.
- Bake: 200°C for 12–15 minutes with butter, lemon and herbs.
- Smoke at home: brine and hot-smoke over oak.
Pair with creamed horseradish on the side and a chilled Sauvignon Blanc or Picpoul de Pinet.
