How to cook plaice fillets
- Pan-fry: dredge in seasoned flour, fry in butter and oil over medium-high heat for 2–3 minutes per side until golden.
- Beer-battered: 180°C for 4–5 minutes — quicker than cod and just as good.
- Bake: 200°C for 8–10 minutes with butter, lemon and white wine.
- Plaice fillets with tomato, garlic and parsley butter: a Bradley’s house favourite.
- Fish pie or fishcakes: poach in milk, flake into mash or béchamel.
Pair with a chilled Pinot Grigio or a lightly oaked Chardonnay.
