From English waters — sea bass is slow-growing, with the beautiful silvery skin and hard scales that mark it apart from farmed alternatives. Famous for its flaky, creamy white flesh and mild salty character. Sized for a single individual portion or a small Mediterranean-style centrepiece.

How to cook
- Oven roast: stuff with lemon, garlic, herbs and a splash of white wine, roast at 200°C for 18–22 minutes.
- Salt-baked: 200°C for 20–25 minutes encased in egg-white-bound rock salt.
- BBQ: grill on a flat plate for 6–8 minutes per side.
- Steamed (Asian-style): 14–18 minutes with ginger, soy and spring onion.
- Pan-fry whole: 5–6 minutes per side with garlic butter.
Pair with a chilled Riesling or Albariño.
