Octopus used for sushi is always pre-boiled (raw octopus is too chewy), and tako delivers the mildly sweet flavour and juicy texture that’s prized at the sushi counter. Ready to eat after defrosting.

How to serve

  • Nigiri (the classic): drape a slice over a small ball of seasoned sushi rice; brush with soy.
  • Sashimi: serve with soy, wasabi and pickled ginger.
  • Tako carpaccio: slice thin, dress with olive oil, lemon zest, capers and chilli — Italian-Japanese fusion.
  • Salad: with red onion, parsley, olive oil and lemon — Mediterranean-style.
  • Stir-fry or soup: add at the end to warm through.

Pair with chilled sake or a dry Riesling.
