How to cook squid tentacles
Hot and fast or slow and braised — the in-between is what makes squid rubbery.
- Tempura: dip in cold tempura batter, deep-fry 90 seconds at 180°C.
- Stir-fry: add to the wok in the last 60–90 seconds with chilli, garlic and ginger.
- Spanish plancha: 60–90 seconds per side on a smoking-hot griddle with sea salt and lemon.
- Pasta: tossed through hot garlic-and-tomato linguine off the heat.
- BBQ skewers: 60 seconds per side over high heat.
Pair with a chilled Vermentino or Albariño.
