How to cook
- BBQ: 2–3 minutes per side over high heat shell-on.
- Pan-fry: 3–4 minutes total in butter and garlic.
- Paella: arrange across the rice in the last 5 minutes.
- Stir-fry: peel and add in the last 90 seconds.
Pair with a chilled Albariño or Spanish rosé.
