How to cook
- Shallow-fry (the classic): dust with seasoned flour, fry in a shallow layer of hot oil for 2–3 minutes until crisp and golden.
- Deep-fry: 180°C for 2–3 minutes until crisp.
- Pan-fry with garlic: in a smoking-hot pan with olive oil and garlic for 90 seconds.
Serve with a wedge of lemon, sea salt, fresh parsley and a tartare or aioli dip. Pair with a cold pint of bitter or a chilled Albariño.
