How to cook scallops in the shell
- Pan-sear (the classic): remove from shell, pat dry, sear 2 minutes each side in butter and oil over high heat — don’t move them until caramelised.
- Grill in shell: top with garlic butter, breadcrumbs and parsley; grill in the half shell for 5–6 minutes.
- Roast in shell: 200°C for 8–10 minutes with butter, garlic and lemon.
- BBQ: grill in shell over medium heat for 6–8 minutes.
Pair with a chilled Chablis, Sancerre or English sparkling wine.
