How to use
- Classic fish pie: poach gently in milk, flake into béchamel with hard-boiled eggs and peas, top with mash, bake until golden.
- Bouillabaisse: a Provence fish stew with saffron, fennel, tomato and orange peel.
- Fish chowder: with potatoes, leeks, bacon and cream.
- Fishcakes: bind cooked, flaked fish with mash and breadcrumb; pan-fry in butter.
- Cottage-style bake: with mashed potato topping and herbs.
Pair with a crisp dry white — Picpoul, Albariño, Muscadet.
