The Yellow Sole has a firm, delicate texture and little flakes. The flesh is white, rather than the pinkish colour of a Red Mullet fillet which has a strong flavour. This mild flavour makes it ideal for a simple classic recipe which is just amazing! Simply perfect with a little lemon and butter!
