Wild sea bass commands a serious premium over farmed for good reason: firmer flesh, deeper flavour, the silvery-blue skin that crisps beautifully under high heat. The dinner-party fillet that needs nothing more than butter and lemon.

How to cook

  • Pan-fry skin-down: 4 minutes skin-down in hot oil, press for the first minute, flip for 1–2 minutes off-heat.
  • Bake: 200°C for 12–15 minutes with butter, lemon and herbs.
  • BBQ: grill skin-down for 4 minutes, flip for 1.
  • Steamed (Asian-style): with ginger, soy and spring onion.

Pair with a chilled Albariño or English sparkling wine.
