If there is one dish that is typical of Cadiz, then this is it.
Ingredients
- 500g Huss
- 1 clove of garlic
- 1 tsp dried oregano
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp salt
- 2 tbsp sherry vinegar
- 2 tbsp olive oli
- plain flour
Method
- Crush the garlic and mix with oregano, spices, salt, vinegar and oil in a bowl
- Cover the fish with the marinade mixture and place in a large bowl, cover and leave in the fridge for at least 1 hour
- Coat the fish in four on a plate
- Heat some oilve oil in a large frying pan to 0.5cm deep
- Once the oil is fairly hot but not too hot place the fish in the oil – probably in batches
- Fry for a couple of minutes until a golden red colour and then continue for just a little more until done
