How to cook
- BBQ: 2–3 minutes per side over high heat shell-on.
- Butterfly: split, brush with garlic butter, grill flesh-up for 4–5 minutes.
- Pan-fry: 3–4 minutes total in butter and garlic.
- Paella: arrange across the rice in the last 5 minutes.
Save the heads for prawn stock. Pair with a chilled Albariño.
