An 800g–900g sushi-grade Coho salmon fillet — one of the finest salmon products we’ve sourced. Farmed in Chile, with firm orange flesh and the robust flavour that distinguishes Coho (silver salmon) from milder Atlantic. Sushi-grade means it can be eaten raw or cooked. Substantial enough for a 4–5 person centrepiece roast or a slab of sashimi for a sushi night.

How to serve
- Sashimi: slice thin against the grain, serve with soy, wasabi and pickled ginger.
- Nigiri: drape slices over seasoned sushi rice; brush with soy.
- Whole roast: 180°C for 22–28 minutes with butter, lemon and dill.
- Pan-sear (after slicing): 3–4 minutes skin-down, flip for 1–2 minutes off-heat.
- Cold poached (buffet classic): simmer in court bouillon, serve with hollandaise.
Pair with chilled Champagne, Pinot Noir or English sparkling.
