How to cook plaice
- Pan-fry: dredge in seasoned flour, fry in butter and oil over medium-high for 2–3 minutes per side until golden.
- Beer-battered: 180°C for 4–5 minutes — a quicker chip-shop fish than cod.
- Bake: 200°C for 8–10 minutes with butter, lemon, white wine and herbs.
- Goujons: strip into fingers, breadcrumb and shallow-fry — great for kids.
- Plaice with tomato, garlic and parsley butter: a Bradley’s house favourite.
Pair with a chilled Pinot Grigio or a lightly-oaked Chardonnay.
