How to cook
- BBQ (the classic): 3–4 minutes per side over medium-high heat, simply with sea salt and lemon.
- Pan-sear: 2–3 minutes per side in a hot pan with olive oil.
- Grill: 3 minutes per side under a medium-high grill.
- Bake with tomato: in robust tomato sauce at 200°C for 12–15 minutes — the Portuguese style.
- Cold: dressed with butter, lemon and herbs over new potatoes.
Pair with Vinho Verde, Albariño or a chilled Manzanilla sherry.
