A 500g pack of wild hard-shell clams — harvested in the clean deep waters off the coast of the Isle of Wight. Relatively large for clams, with a slightly chewy texture and a more pronounced sea flavour than the smaller littleneck varieties. A serious British shellfish ingredient.

How to cook

  • Pasta vongole: add to hot garlic-and-white-wine pan in the last 3–4 minutes; toss with linguine.
  • Chowder: the New England classic with potato, bacon and cream.
  • Paella: arrange across the rice in the last 5 minutes.
  • Cataplana: Portuguese-style with chorizo, white wine and tomatoes.

Pair with a chilled Muscadet or Albariño.
