Cooked and frozen at peak season, then individually quick-frozen so you can pull out a handful for the lunchbox or a couple of pints for a Sunday afternoon. 800 to 1000 cockles per kilo. A genuine British seaside heritage food, traditionally sold by the pint outside London pubs since Victorian times.

How to serve

  • Traditional British style: with malt vinegar, white pepper and brown bread.
  • Pasta vongole: add to a hot garlic-and-white-wine pan in the last 2 minutes; toss with linguine.
  • Salad: warm with chilli and parsley, dress with lemon, serve over rocket.
  • Risotto / paella: add at the end to warm through.
  • Stews: Portuguese cataplana-style with chorizo, white wine and tomatoes.

Pair with a chilled English sparkling, a Muscadet or a cold pint of bitter for the seaside-snack version.
