The crabmeat is placed in enclosed glass jars or plastic cups and then pasteurised. The process takes about 4 hours, including 2 hours at 89°C and 2 hours in an ice bath. Since the product never boils, it is the sudden change of temperature that destroys most bacteria. The pasteurisation process kills any bacteria that could have been present during the manufacturing stages, making it healthy to eat straight from the can.
