Anguilla rostrata — the American freshwater eel — caught in the autumn from sustainable Canadian sources, with a firm-but-delicate texture similar to octopus but more tender.

How to cook
- Jellied eels (the East End classic): simmer in vinegared water with bay leaves and peppercorns for 30–40 minutes; cool to set in jelly.
- Stew / matelote: French country style with red wine, bacon, shallots and herbs.
- Smoke at home: brine, then hot-smoke over oak.
- Grill (unagi-style): brush with teriyaki sauce, grill 3 minutes per side.
- Stir-fry / Asian: with ginger, soy and chilli over noodles.
Pair with a chilled Albariño, a Riesling or sake for Asian preparations.
