How to cook
- Pan-fry: dust in seasoned flour, fry in butter and oil for 3 minutes per side.
- Bake: 200°C for 12–15 minutes with butter, lemon and herbs.
- Beer-battered: 180°C for 5–6 minutes — chip-shop classic.
- Tray-bake: over chorizo, butter beans and cherry tomatoes.
- Fish pie: poach in milk, flake into béchamel.
Pair with a chilled Picpoul de Pinet or Albariño.
