Hoki is a lean white fish with a medium-flaky texture and a delicate sweet flavour, making it one of the best straight-swap alternatives to cod.

How to cook

  • Pan-fry: dust in seasoned flour, fry in butter and oil for 3 minutes per side.
  • Bake: 200°C for 12–15 minutes with butter, lemon and herbs.
  • Beer-battered: 180°C for 5–6 minutes — chip-shop classic.
  • Tray-bake: over chorizo, butter beans and cherry tomatoes.
  • Fish pie: poach in milk, flake into béchamel.

Pair with a chilled Picpoul de Pinet or Albariño.
