How to cook
- Grill: medium heat for 4–5 minutes, alternating sides.
- Pan-fry: 3 minutes skin-down in butter, 2 minutes flesh-down.
- Poach (Victorian style): stand in just-boiled water for 5 minutes — less smell.
- BBQ: grill outdoors to keep the aroma where it belongs.
Serve with hot buttered brown bread, a poached egg and a squeeze of lemon. Pair with Soave, Frascati or a southern French Terret.
