How to cook
- Grill: 4–5 minutes, alternating sides.
- Pan-fry: in butter, 3 minutes skin-down + 2 flesh-down.
- Jug poach: stand in just-boiled water for 5 minutes.
- Kedgeree: flake into curried rice with eggs and peas.
Serve with buttered brown bread, lemon and a poached egg. Pair with Soave or a French Terret.
