A 1kg pack of wild line-caught Indian mackerel — a different species from the Atlantic mackerel most British shoppers know, with lighter, milder, meatier flesh and a firm flaky texture. Indian mackerel lives in the warmer shallow waters of the Indian and Pacific Oceans, and it’s the foundation of Goan, Sri Lankan and Indonesian fish curries.

How to cook

  • Goan curry: the classic preparation — with tomato, coconut, mustard seeds and tamarind.
  • Pan-fry: 3–4 minutes per side in oil with mustard seeds and curry leaves.
  • Grill: 4 minutes per side, brushed with oil and turmeric.
  • Soup: South-East-Asian style with lemongrass, ginger and chilli.

Pair with a chilled Riesling or a cold lager for the curry preparations.
