One farmed Nile perch fillet, 350–500g. Nile perch (Lates niloticus) is one of the largest freshwater fish in the world, native to the deep slow-flowing waters of African lakes and rivers. The fillet has a creamy, medium-firm, light pink flesh similar in feel to a fish steak, with a rich complex flavour carrying notes of citrus and tropical fruit. Naturally rich in Omega-3, minerals and vitamin D.

How to cook
- Pan-fry: dust with seasoned flour, fry in butter and oil for 3–4 minutes per side.
- Grill: 4 minutes per side under a hot grill.
- Bake: 200°C for 12–15 minutes with butter, lemon and herbs.
- Poach: gently in fish stock or court bouillon for 6–8 minutes.
- Tropical-style: with mango salsa, lime and coconut rice.
Pair with a chilled Riesling or a Sauvignon Blanc.
