Skip the messy job of cleaning and prepping a whole octopus and go straight to the prized cuts. When cooked, tentacles have a texture similar to lobster meat, with the meaty bite of properly tenderised octopus.

How to cook

  • Spanish plancha: hot flat-iron grill, 2–3 minutes per side; finish with sea salt, olive oil, paprika and lemon.
  • Grilled / BBQ: 3 minutes per side over high heat with olive oil and garlic.
  • Braised: in tomato sauce with garlic and red wine for 60–90 minutes; slice and serve over polenta.
  • Skewered: cut, skewered, grilled with salmoriglio.
  • Cold octopus salad: sliced with new potatoes, parsley, olive oil and red onion.

Pair with a chilled Albariño or Vermentino.
