How to cook
- BBQ / griddle: 2–3 minutes per side over high heat — cook shell-on for the best flavour.
- Pan-fry: butter, garlic and chilli over medium-high for 3–4 minutes total.
- Oven: 220°C for 7–9 minutes.
- Paella / arroz: add to the rice in the last 6–8 minutes; the heads enrich the rice as they cook.
Save the heads — they make an excellent prawn stock or bisque base. Pair with a chilled Albariño or a crisp Spanish rosé.
