A 1kg gross box (800g net) of our second-biggest whole uncooked prawns — 4 to 6 enormous prawns per pack, bigger than the picture suggests. Pale, chewy-textured, subtly sweet (similar to other shellfish like crab and lobster). Built for garlic-butter butterflied preparations where the size is the whole point.

How to cook
- Garlic-butter butterfly: split lengthwise, brush with garlic and parsley butter, grill flesh-up for 4–5 minutes.
- BBQ: 3 minutes per side over high heat shell-on.
- Pan-fry: 4 minutes total in butter, garlic and chilli.
- Paella centrepiece: arrange across the rice in the last 5 minutes.
Save the heads for prawn stock or bisque. Pair with chilled Albariño or Spanish rosé.
