Sea bass is the Mediterranean’s most celebrated table fish — moderately firm, moist, white flesh with a slightly salty character and beautiful silvery-blue skin. This size sits perfectly between the smaller 400–500g and larger 1.5kg+ packs — ideal for two diners or a generous main for one.

How to cook

  • Oven (Mediterranean style): stuff with lemon, garlic and herbs, roast at 200°C for 22–26 minutes.
  • Salt-baked: 200°C for 25–30 minutes in egg-white-bound rock salt.
  • BBQ: grill on a flat plate for 7–9 minutes per side.
  • Steamed (Asian-style): 16–20 minutes with ginger, soy and spring onion.

Pair with a Riesling, Albariño or Sauvignon Blanc.
