How to cook sea bream fillet
- En papillote (the classic): wrap with new potatoes, white wine, lemon and herbs in parchment; bake at 200°C for 18–20 minutes.
- Pan-fry: 3–4 minutes skin-down in oil, flip for 1–2 minutes off heat.
- Bake: 200°C for 12–15 minutes with cherry tomatoes, olives and oregano.
- Grill: 4 minutes skin-down on a hot griddle, finish flesh-down for 1 minute.
Pair with a chilled Sancerre, Chenin Blanc or a Greek Assyrtiko.
