A 1kg pack of peeled and deveined wild Argentinian red shrimp (Pleoticus muelleri) — the same cold-water Argentine red shrimp that’s prized in restaurants for its lobster-like sweetness and juicy, tender flesh. A genuine quality step up from the farmed vannamei and black tiger prawns that dominate UK supermarkets, with a deeper colour and a more intense flavour. Cooks in half the time of regular prawns — resist the urge to overdo them.

How to cook

  • Pan-sear: 1–2 minutes per side over high heat — cooks in half the time of other shrimp.
  • Stir-fry: add to the wok in the last 60 seconds.
  • Pasta: toss through hot linguine with garlic, chilli and lemon.
  • Ceviche: dice and “cook” in lime juice with red onion, chilli and coriander for 30 minutes.

Pair with a chilled Albariño or a dry Spanish rosé.
