How to cook baby squid
- Calamaretti alla piastra: grill on a smoking-hot griddle for 60–90 seconds per side; finish with salmoriglio.
- Tempura: dip in cold tempura batter, deep-fry at 180°C for 90 seconds.
- Pan-sear: hot pan with olive oil, garlic and chilli, 60 seconds per side.
- Sushi / sashimi: slice raw, serve with soy and wasabi.
- Stuffed and braised: stuff with breadcrumbs, herbs and cheese; braise in tomato sauce.
